Colombian San Adolfo Speciality Coffee
Aley Calderón is a speciality coffee producer from San Adolfo in Acevedo, Huila. Since 2021, he has explored honey, natural and fermentation-led processing methods to develop distinctive flavour profiles.
This lot combines Castillo and Colombia varieties and is fully washed using a double-fermentation process. The ripe cherries are fermented for eight hours before pulping, then fermented for a further 24 hours. The coffee is thoroughly washed and slowly dried in a parabolic greenhouse.
Huila’s volcanic soils, high altitudes and varied climate create excellent conditions for coffee growing. The region is known for producing balanced coffees with bright acidity and natural sweetness.
This single origin Colombian San Adolfo Speciality Coffee is a medium roast with notes of Plum, Honey & Milk Chocolate.
For brewing at home, we recommend using an AeroPress to bring out its smooth body, natural sweetness and chocolatey finish.
