Description

Nook Farm Honey can be found in the North of Cumbria, close to the Scottish border. This remote countryside provides ideal conditions for raw, unpasteurized honey production – away from industry and major highways. The bees are free to fly uninterrupted in their quest for pollen.

English Blossom Honey is a runny honey with a clear, dark golden colour. It has a strong, sweet taste which melts away on your tongue. The flavours come from a mix of blossom from Lime, Apple, Hawthorne and Dandelions.  This lovely honey is produced by our friend whose apiaries are located around parks, gardens and golf courses near Manchester, where there is an abundance and variety of pollen for the bees to gather. This gives the honey a luxurious texture and makes it very versatile; it can be used as a sugar substitute in cooking and hot drinks. It adds flavour and sweetness without overpowering other tastes, great to use every day.

Balsam Honey has a lovely smooth consistency and is a deep, rich amber colour. It has a delicious, distinctive taste with a background flavour that hints of toffee.  It is a single flower honey, from bees kept in areas where Balsam grows in huge quantities, often along riverbanks. The plant, originally from Asia, has now become an aggressive invasive weed, smothering anything in its path. However, the bees love the pretty pinky white flowers, and after visiting the plant, are usually covered in white pollen. Balsam Honey is the perfect accompaniment to ice cream or yoghurt, or can add extra depth of flavour in cooking, especially stir-fries and curries.

Borage Honey is a pale, lightly coloured, runny honey with a delicate, mild taste.  Borage honey is versatile, often used to sweeten drinks, adding flavour without being overpowering.   In the summer, a field of Borage will be alive with the sound of honeybees. Borage or Starflower is a traditional culinary herb, native to the Mediterranean. It was first cultivated in Turkey and Syria. You may be familiar with Borage in your garden or have seen the flowers in a glass of Pimm’s.
