Description
Single Origin Peruvian San Ignacio Speciality Coffee comes from Finca El Diamante and a group of smallholder farmers in northern Peru. Roger Chilcon Flores is the largest contributor to this carefully selected microlot.
The coffee is grown at high altitude, where rich soils, tropical rainfall and consistent sunlight provide excellent conditions for Arabica coffee. Caturra and Catuai form the backbone of the flavour profile, supported by smaller amounts of Pache, Bourbon, Typica and Marsellesa.
The producers harvest and process the coffee on their farms using hand-pulping machines and fermentation tanks. It is then dried on patios or raised beds before being delivered as parchment coffee to the warehouse in Jaén.
At the warehouse, the coffee is graded, moisture-tested and cupped. Farmers receive prompt quality feedback, a cup score and an offer price for their crop.
The result is a smooth and rounded Single Origin Peruvian San Ignacio Speciality Coffee with notes of Apple, Caramel & Chocolate.
For brewing at home, we recommend Espresso, Moka Pot, AeroPress or French Press.
